Collagen Fruit Jellies (Printable Version)

Naturally sweet, chewy fruit jellies infused with collagen for a healthy, guilt-free treat the whole family will love.

# What You Need:

→ Fruit Base

01 - 1 cup 100% fruit juice (orange, mixed berries, or apple)
02 - 2 to 3 tablespoons honey or maple syrup (optional, to taste)

→ Collagen and Gelling

03 - 2 tablespoons grass-fed collagen peptides (about 20 g)
04 - 3 tablespoons unflavored gelatin powder (about 30 g)

# How to Make It:

01 - Pour the fruit juice into a small saucepan. Sprinkle the gelatin evenly over the surface and let it sit for 2 to 3 minutes to bloom.
02 - Place the saucepan over low heat and stir constantly until the gelatin dissolves completely. Do not allow the mixture to boil.
03 - Remove from heat. Stir in the collagen peptides and honey or maple syrup if using, mixing thoroughly until fully combined.
04 - Transfer the mixture into silicone molds or a small baking dish lined with parchment paper.
05 - Refrigerate for at least 2 hours or until the jellies are completely firm.
06 - Once set, carefully remove the jellies from the molds. If using a baking dish, cut into bite-sized pieces with a paring knife.
07 - Keep the jellies in an airtight container in the refrigerator for up to 1 week.

# Expert Advice:

01 -
  • They taste like candy but are secretly fueling your skin and joints with every bite.
  • Three ingredients and barely any hands on time means you can make these on a weeknight without thinking twice.
02 -
  • If the gelatin does not bloom properly your jellies will never set, so resist the urge to stir while it sits on the juice.
  • Boiling the mixture destroyed an entire batch for me once and left me with a sticky liquid that never firmed up overnight.
03 -
  • Sprinkle the gelatin slowly and evenly rather than dumping it in a clump, because wet spots will form lumps that never dissolve.
  • Lightly oil your knife with coconut oil before cutting squares from a dish and you will get perfectly clean edges every single time.
