01 - Preheat oven to 350°F.
02 - In a large mixing bowl, combine cream cheese and sour cream. Stir until smooth and creamy.
03 - Add corn, red bell pepper, green onions, jalapeño, cheddar cheese, Monterey Jack cheese, garlic powder, smoked paprika, salt, and black pepper. Mix until all ingredients are evenly distributed throughout the mixture.
04 - Transfer the mixture to a 9-inch oven-safe baking dish. Spread evenly across the surface.
05 - Bake for 25 minutes, or until hot and bubbly and the top is lightly golden brown.
06 - Remove from oven and let cool for 5 minutes. Garnish with chopped cilantro if desired.
07 - Serve warm with tortilla chips, crackers, or sliced vegetables.
