# What You Need:

→ Bread

01 - 8 slices white or whole wheat sandwich bread, crusts removed

→ Cheese Filling

02 - 8 sticks mozzarella cheese (or cheddar, about 1 oz each)

→ Egg Wash

03 - 2 large eggs
04 - 2 tbsp milk

→ Breadcrumb Coating

05 - 1 cup panko breadcrumbs
06 - 1/2 cup grated Parmesan cheese
07 - 1 tsp garlic powder
08 - 1/2 tsp dried oregano
09 - 1/4 tsp black pepper
10 - 1/4 tsp salt

→ Frying

11 - 1/3 cup vegetable oil for pan frying

# How to Make It:

01 - Using a rolling pin, gently flatten each slice of bread until thin and pliable.
02 - Place a cheese stick or a strip of cheese at one end of each bread slice. Roll up tightly to secure the filling.
03 - In a shallow bowl, whisk together the eggs and milk until fully combined.
04 - In another shallow bowl, combine panko, Parmesan, garlic powder, oregano, pepper, and salt. Mix well.
05 - Dip each roll up first in the egg mixture, allowing excess to drip off, then coat thoroughly with the breadcrumb mixture, pressing gently to adhere.
06 - Heat oil in a large skillet over medium heat until shimmering but not smoking.
07 - Fry the roll ups in batches, turning until all sides are golden brown and crispy, about 2-3 minutes per batch. Do not overcrowd the pan.
08 - Remove from skillet and drain on paper towels. Serve hot with your choice of dipping sauce.

# Expert Advice:

01 -
  • The satisfying crunch when you bite through that golden coating into warm melted cheese is impossible to resist
  • They come together in under 30 minutes with ingredients you probably already have in your kitchen
  • Perfect for feeding a crowd since everyone can grab them with their hands and dip away
02 -
  • Do not skip removing the crusts because they create uneven spots that will not roll properly and the coating falls off those thicker edges
  • Keep the oil at medium heat because high heat burns the coating before the cheese inside has a chance to melt completely
  • Roll the bread as tightly as possible around the cheese or it will escape during frying and you will end up with crispy cheese sticks instead
03 -
  • Let the coated roll ups sit for 10 minutes before frying so the breading sets and will not slide off during cooking
  • Use tongs to turn the roll ups instead of a fork which might puncture the coating and let cheese escape
