# What You Need:

→ Waffle Batter

01 - 2 cups all-purpose flour
02 - 2 tablespoons granulated sugar
03 - 2 teaspoons baking powder
04 - ½ teaspoon baking soda
05 - ¼ teaspoon salt
06 - 2 large eggs
07 - 1¾ cups whole milk
08 - ⅓ cup unsalted butter, melted and cooled
09 - 1 teaspoon pure vanilla extract

→ Topping

10 - 1 pound fresh strawberries, hulled and sliced
11 - 2 tablespoons granulated sugar (optional, for macerating)
12 - 1 cup heavy whipping cream
13 - 2 tablespoons powdered sugar
14 - ½ teaspoon vanilla extract
15 - Powdered sugar, for dusting (optional)

# How to Make It:

01 - In a medium bowl, gently combine the sliced strawberries with 2 tablespoons of granulated sugar (if using). Allow to rest and macerate while preparing the waffle batter.
02 - Preheat your heart-shaped waffle iron according to the manufacturer's instructions.
03 - In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until thoroughly combined.
04 - In a separate bowl, lightly beat the large eggs. Incorporate the whole milk, melted and cooled unsalted butter, and pure vanilla extract, mixing until well blended.
05 - Gradually pour the wet ingredients into the dry ingredients. Stir just until combined, being careful not to overmix. A few small lumps are acceptable.
06 - Lightly grease the preheated waffle iron with a nonstick spray or a brush of melted butter. Ladle the prepared batter onto the hot iron (adjusting quantity based on your specific waffle maker) and cook according to the manufacturer's directions until golden brown and crisply cooked. Repeat with the remaining batter.
07 - While the waffles are cooking, whip the heavy cream with the powdered sugar and ½ teaspoon vanilla extract until soft peaks begin to form.
08 - To serve, artfully arrange the freshly cooked waffles on individual plates. Generously top with the macerated strawberries and a dollop of the freshly whipped cream. Lightly dust with additional powdered sugar, if desired.

# Expert Advice:

01 -
  • It's an effortless way to make any breakfast feel like a special occasion, no matter the day of the week.
  • The combination of warm, fluffy waffles with bright, fresh fruit and a cloud of whipped cream is simply irresistible and surprisingly easy to achieve.
02 -
  • Always ensure your melted butter is cooled before adding it to the wet ingredients; I once made the mistake of adding hot butter and ended up with tiny scrambled bits of egg in my batter.
  • Do not overmix the batter! Overmixing develops the gluten too much, leading to tough, chewy waffles instead of the light, fluffy texture we're aiming for.
03 -
  • To keep multiple waffles warm and crispy while you finish the batch, place them directly on a wire rack in a preheated oven at 200°F (95°C).
  • For extra fluffy waffles, separate the egg whites and whip them to soft peaks before gently folding them into the batter as the very last step.
