01 - 5 cups dashi stock or low-sodium chicken/vegetable broth

# How to Make It:

01 - In a large saucepan, combine dashi stock, soy sauce, mirin, sesame oil, and salt. Bring to a gentle simmer over medium heat, stirring occasionally to dissolve seasonings.
02 - Add the julienned carrots and sliced shiitake mushrooms to the simmering broth. Cook for 5 minutes until vegetables begin to soften and mushrooms become fragrant.
03 - Gently add cubed tofu to the broth and simmer for another 2 minutes. Avoid vigorous stirring to prevent tofu from breaking apart.
04 - Place harusame noodles in a heatproof bowl and cover with boiling water. Soak for 4 to 5 minutes until tender but still slightly al dente. Drain thoroughly and divide evenly among four serving bowls.
05 - Add spinach or bok choy to the simmering broth and cook for 1 minute until just wilted. Remove from heat immediately to preserve texture and color.
06 - Ladle the hot broth with vegetables and tofu over the noodles in each bowl. Garnish with toasted sesame seeds and additional sliced spring onion. Serve immediately while steaming hot.
