# How to Make It:

01 - Combine oats, walnuts, and shredded coconut in a food processor. Pulse until finely chopped and well incorporated.
02 - Add pitted Medjool dates to the processor. Pulse again until the mixture becomes crumbly and dates are evenly distributed.
03 - Add grated carrots, maple syrup, vanilla extract, cinnamon, ginger, nutmeg, and salt. Process until the mixture begins to bind together and holds its shape when pressed between fingers.
04 - Transfer mixture to a mixing bowl. Stir in raisins and additional chopped nuts if desired, ensuring even distribution.
05 - Lightly moisten hands with water. Roll tablespoon portions of mixture into smooth, uniform balls, yielding approximately 18 bites.
06 - For added texture, roll exterior of bites in extra shredded coconut, pressing gently to adhere.
07 - Refrigerate bites for at least 30 minutes to firm texture and allow flavors to meld before serving.
