# How to Make It:

01 - Preheat the oven to 425°F and line a large baking sheet with parchment paper.
02 - In a large bowl, toss the sweet potato fries with olive oil, smoked paprika, garlic powder, salt, black pepper, and cayenne until evenly coated.
03 - Spread the fries in a single layer on the prepared baking sheet, ensuring they are not crowded to allow for even roasting.
04 - Roast for 15 minutes, then flip the fries and continue roasting for another 12–15 minutes, or until golden and crisp at the edges.
05 - While the fries are roasting, combine the mayonnaise, chopped chipotle peppers, adobo sauce, lime juice, minced garlic, and a pinch of salt in a small bowl. Mix well and refrigerate until ready to serve.
06 - Remove the fries from the oven and allow them to cool slightly. Serve hot with the chipotle mayo on the side.
