# Expert Advice:

01 -
  • These vegetables develop the most incredible caramelized edges that concentrate their natural sweetness in a way steaming or sautéing never achieves.
  • Its virtually impossible to mess up even on busy weeknights I simply toss everything together and let the oven work its magic while I tackle other tasks.
02 -
  • Never cover roasting vegetables with foil or youll trap steam and end up with soggy results instead of those coveted crispy edges.
  • I learned the hard way that pre-cut vegetables from the store release too much moisture during roasting, so taking time to cut fresh ones makes a world of difference in the final texture.
03 -
  • For maximum caramelization, pat vegetables completely dry after washing them water is the enemy of that perfect roasted edge.
  • Position your baking sheet on the lower third rack of your oven where heat is more intense, creating better browning without burning.
