# What You Need:

→ Coconut Base

01 - 2 cups (480 ml) full-fat coconut milk
02 - 1 cup (240 ml) coconut cream
03 - 3/4 cup (150 g) granulated sugar
04 - 1/4 teaspoon fine sea salt
05 - 2 teaspoons pure vanilla extract

→ Optional Mix-ins

06 - 1/2 cup (60 g) toasted coconut flakes
07 - 1/3 cup (50 g) roasted unsalted peanuts, chopped
08 - 1/2 cup (60 g) diced ripe mango

# How to Make It:

01 - Combine coconut milk, coconut cream, sugar, and salt in a medium saucepan over medium heat. Stir constantly until sugar completely dissolves, approximately 3–5 minutes. Avoid boiling the mixture.
02 - Remove saucepan from heat and stir in vanilla extract until fully incorporated.
03 - Let mixture cool to room temperature, then refrigerate until thoroughly chilled for at least 2 hours.
04 - Pour chilled mixture into ice cream maker and churn according to manufacturer's instructions, typically 20–25 minutes, until reaching soft-serve consistency.
05 - If using mix-ins, gently fold toasted coconut flakes, chopped peanuts, or diced mango into the churned ice cream during the final minute of churning.
06 - Transfer ice cream to a lidded freezer-safe container. Freeze for at least 2 hours or until firm throughout.
07 - Let container sit at room temperature for 5–10 minutes before scooping. Serve plain or with additional toppings as desired.

# Expert Advice:

01 -
  • Dairy free doesnt mean flavor free here, the coconut richness delivers everything you want from ice cream
  • One batch lasts me a week of dessert cravings, though my family usually finishes it faster
02 -
  • The chilling step is not optional, warm base churns into grainy ice cream every single time
  • Do not let your coconut mixture boil, high heat can cause the fats to separate and you will end up with a weird texture
03 -
  • Shake your coconut cans before opening, sometimes the cream separates and settles at the bottom
  • Make sure your freezer container is completely chilled before adding your ice cream for faster freezing
